Smoked prawns produced correctly are a delight. The flavour and succulence more than offset the effort of pealing the prawns. I used to worry about the correct way to shell a prawn - not any more I just do my own thing. (This is very much a finger starter - best prize goes to who shells a prawn most effectively) Ideal as a starter Serves 4
