Smoked Prawn and Avocado Salad

Smoked prawns produced correctly are a delight. The flavour and succulence more than offset the effort of pealing the prawns.  I used to worry about the correct way to shell a prawn - not any more I just do my own thing.

(This is very much a finger starter - best prize goes to who shells a prawn most effectively)

Ideal as a starter

Serves 4

  • 300gm Mackenzies Smoked shell on Prawns
  • 200gm mixed leaf salad ( or leaves of your choice)
  • 1 ripe avocado
  • 8 tablespoons of Italian dressing**
  • 4 medium tomatoes
  • 4 tblspns mayonnaise
  • zest of 1/2 lemon
  • salt and black pepper (optional) to flavour
