What better way to start the day than with a delicious 'bacon buttie' made with Mackenzies bacon, mmmm. It really is 'proper' bacon.  I also love the delicate flavour of their smoked salmon.  I'm tempted to lie when serving their smoked salmon pate and say its my own, but I don't and its always a hit.

Smoked Salmon Sandwiches

To me the classic smoked salmon sandwich conjures up memories of an idyllic English summers day, bees buzzing, birds twittering and the sound of laughter.

It is quite the 'done thing'! to enjoy smoked salmon sandwiches with the crust cut off the bread.  Just as well.  My mother always used to say that eating the crusts of bread would put hairs on your chest, whilst my grandmother insisted that crusts on bread made your hair curl!

The Classic Version

  • Fine slices of white, wholemeal, wheat meal, brown bread or quite frankly whatever takes your fancy. 
  • Slices of Mackenzies smoked salmon.
  • Butter or spread of your liking
  • Freshly milled pepper and or a squeeze of lemon juice (If you must - a really good smoked salmon should stand on its own merits)
  1. Finely cut the bread - (Crusts off girls!).
  2. Spread one side of each slice with butter
  3. Carefully place a slice of Mackenzies Smoked Salmon (tailored to each slice!) on one slice of bread.
  4. Optional: Add a squeeze of lemon juice (not too much as the bread will go soggy) and or a few grinds of black pepper
  5. Sandwich together
  6. Cut - carefully into squares, triangles or oblong.
  7. Enjoy.

Variations on a theme:

  • The numbers of accompaniments as fillings to a smoked salmon sandwich are endless, here are few ideas:-
  • Smoked salmon and thinly spread crËme fraiche
  • Smoked salmon and prawns with mayonnaise
  • Smoked salmon, crËme fraiche and a small amount of finely chopped capers
  • Smoked salmon and cucumber
  • Smoked salmon and thinly spread chilli and lime mayonnaise etc. etc. etc.
