What better way to start the day than with a delicious 'bacon buttie' made with Mackenzies bacon, mmmm. It really is 'proper' bacon.  I also love the delicate flavour of their smoked salmon.  I'm tempted to lie when serving their smoked salmon pate and say its my own, but I don't and its always a hit.

My daughter bought me some Smoked Duck from a show, which you were attending in York. I have never had anything like this. Does it have to be refrigerated and what do I do with it?

Yes, the duck must be refrigerated as per the label instructions on the pack.  You are quite right to ask - a lot of people think that just because a product is vacuum packed that it can be kept un refrigerated - that is not so.  Keep refrigerated and once the pack has been opened use within 3 days as per the label instructions.

As far as uses, the list is endless but my favourite is to take some lovely green salad leaves and cherry tomatoes, place these on a plate.  Finely slice the Smoked Duck fillet and lay the slices on top of the salad.  Drizzle over the salad with your favourite salad dressing and enjoy with some warm ciabbatta.  Simple, elegant and truly delicious.
